4-Ingredient Creamy Carrot Soup

Vegan too, because this soup gets its creaminess from Arborio rice (risotto)! The flavor trick is homemade veggie soup stock and sweet organic carrots. This soup is creamy and satisfying and has very few calories, perfect for a diet.
Chop one sweet onion and 7-10 carrots (1 lb). Sauté the onions in a bit of olive oil for a minute or two until they are translucent. Add the carrots and sauté another few minutes.
If you want to spice this soup up with ginger or turmeric, add a bit now. About 1/8 to a 1/2 teaspoon of ground ginger is about depending on your taste for it. Sauté a bit more.
Add 4 cups of broth and 1/3 cup Arborio rice.
Bring to a boil, partially cover the pot, reduce the heat and simmer 20-30 minutes until the carrots are soft. Blend in the blender until smooth. Serve with a topping of fresh snipped chives, salt and freshly ground pepper at the table.
